13.6: Mojo Chicken Plate

Recipes I followed: Cuban mojo chicken and pollo a la plancha (for the rice).

How it came out: I am so proud of this plate! The chicken was moist and crispy (I set the oven to broil for the last ~4 minutes it was in there), the onions were outstanding (sautéed sweet onion slices for 30 minutes over medium heat in olive oil with just salt and pepper), the rice had a wonderful consistency, and eating everything together was a practically perfect bite.
